canned chopped tomatoes, drained | 250 ml (1 cup) |
sliced mushrooms | 125ml |
large Italian salami sausages (about 4 oz/110g each), casings removed and sliced | 2 |
dried parsley | 15ml/ 1tbsp |
Heat the oil in a pan over medium heat and add the minced garlic and onion. Saute until golden. Add the rice and stri it around to coat the grains. Add 3 cups/750ml of the hot chicken stock and allow the liquid to simmer until the rice is soft to bite and is fluffy (about 15 to 20 minutes). Add spoonfuls of the remaining stock, striing occasionallly until absorbed by the rice. Add the tomatoes, mushrooms and sausage and simmer until all the ingredients are hot. Just before removing from the heat, mix in the parsley.
