Sausage Risotto

This version of risotto is the perfert one-pot meal. It has to take 30 minutes of your attention, so if you are starving it 's not the beast choice, unless you ca provide some nibbles to eat while the dish is cooking. It is good with chicken or even fish flakes instead of the sausage, and even tates good without any meat at all.
Serves:6 Prep. Time:10 mins Cooking time: 20-30 mins

Oil1 tbsp/15ml

large onion1, finely chopped2
long grain rice750ml (3 cups)
hot chicken stock1L(4cups)
canned chopped tomatoes, drained250 ml (1 cup)
sliced mushrooms125ml
large Italian salami sausages
(about 4 oz/110g each),
casings removed and sliced

dried parsley15ml/ 1tbsp

Heat the oil in a pan over medium heat and add the minced garlic and onion. Saute until golden. Add the rice and stri it around to coat the grains. Add 3 cups/750ml of the hot chicken stock and allow the liquid to simmer until the rice is soft to bite and is fluffy (about 15 to 20 minutes). Add spoonfuls of the remaining stock, striing occasionallly until absorbed by the rice. Add the tomatoes, mushrooms and sausage and simmer until all the ingredients are hot. Just before removing from the heat, mix in the parsley.
